- Heat oil in a saucepan.
- Crush garlic and add to oil.
- Fry for about 1 minute.
- Add veg and fry for 2 minutes.
- Add tomatoes, beans and stock.
- Turn down heat to low and stir well.
- Add flavours.
- Stir well and simmer for 2 minutes.
- Pour chilli into a casserole dish.
- Cover with foil and bake for at least 40 mins to 1 hour.
- Uncover and bake for a further half an hour.
- Serve with brown rice, a baked potato or bread.
